近年來每當有朋友知道我做西餐

總會問我最喜歡的料理是什麼

而法式料理的食材又有什麼呢?

大部分的人總認為頂級料理就是要有鴨肝,松露和魚子醬

彷彿少了這幾樣食材就不是法式料理

似乎忽略了其他食材的重要性

近年來松露與魚子醬價錢飛漲

何況又有誰說過米其林餐廳所用的食材都一定要很昂貴呢?

除了經典料理中的食材無法取代

這些年來各式新式料理崛起

各家新銳名廚運用了世界各地的食材

將自家自我的料理發揮的淋漓盡致

對我來說料理早已沒有國界之分了

中式料理可以用乳酪及酒醋來調味

而西式料理自然也能運用中式食材

在一次的三星頂級饗宴中

"豆豉" ─ 讓我有了難以忘懷的回憶

當我還在國小的時候

就常常與家人到港式餐廳飲茶

豉蒸排骨是我每次造訪必點的料理

但我在小時候總是將它搞錯

有些中文字長的很相似

但卻是完全不同的讀音與字意

而豆豉就是個常見的例子

豆豉讀音為ㄉㄡˋ ㄔˇ 或ㄕˋ

小時候我總是"豉"與"鼓"傻傻分不清楚

而讀成豆鼓 ㄉㄡˋ ㄍㄨˇ

因而惹來不少笑話~

豆豉是中式料理中相當經典的食材之一

為發酵性大豆類製品

我們統稱豆豉又或叫陰豉

有獨特的鮮鹹味

可增加菜餚獨特風味

還有去腥的效果

常見的料理為

豉蒸排骨, 豆豉鮮蚵, 豆豉苦瓜等

豆豉的製作相當的繁雜

首先要將黑豆或黃豆浸泡三天

蒸熟後在草坪上晾乾

讓其自然發酵生長黴菌

之後必須再次浸泡去除苦味

拌上豆汁與鹽巴之後

再陶缸中鹽製發酵27天

分解大豆蛋白質

接著再次曬乾及蒸熟三次

仰制酶的活力延緩發酵過程而製成

完成了豆豉特有的色香味

豆豉的種類相當多

依照原料可分成黑豆豉及黃豆豉

而口味可分成鹹豆豉及淡豆豉

以及乾豆豉及濕豆豉

根據"欣傳媒"細說台菜/有了鼓才算正港台灣味的文中

指出濕豆豉的價格較高

味道較佳且有濃烈的醍醐味

口感較香醇且有自然的甜味

"濕豆豉口感香醇,散發自然的甘甜,彷彿最天然的壺底油,

可輕易掩蓋食材的腥味,也能增加多層次口感。

乾豆豉雖是廢物利用的典範,但部分生產商以專業方式,

專為製造蔭豉而製作,曬乾再包裝出售,這種豆豉既非殘渣也非垃圾,而是頂級調味聖品。"

一般乾豆豉較為鹹

所以通常使用前會先浸泡

降低其鹹度

使之吸收水分

有時趕時間沒充分時間浸泡

我則會將其與些許的糖一同拌炒爆香

 

講了這麼多篇幅無非是想說

中國料理的食材絕對不輸給歐美料理

有時在想新菜色時

無仿看看四周隨手可得的食材

也許能創造出更具獨創性的特色料理呢!

我之所以會對豆豉有這麼多的感觸

全都是因為一道料理 - 章魚佐豆豉洋梨醬

Octopus with black bean pear sauce

米其林三星海鮮餐廳Le Barnadin

今年榮獲2013英國雜誌top50餐廳中第19名

是紐約最受歡迎的餐廳之一

也是紐約唯一以海鮮主題的米其林三星餐廳

座位總是高朋滿座

而定位也是難以取得

在一次的機緣巧合中

我與朋友們在2011年底一同造訪朝聖

無意間看到了這道料理

相當熱愛章魚的我

當然不會錯過這道料理

而讓我最難忘的卻是這醬汁

主廚Eric Ripert巧妙的運用了豆豉中的鮮鹹

搭配上了西洋梨的甜味

兩食材平衡的彼此

將1+1發揮到了3

讓從未吃過豆豉的洋人吃驚

也讓中國人的豆豉走上了米其林的伸展舞台

既然他都能做到

而身為台灣人的我們

應該更能了解我們自家的食材

我們當然更能開創出屬於我們口味的料理

OCTOPUS

  1. 1/2 small onion, sliced
  2. 6 garlic cloves, halved
  3. 2 parsley sprigs
  4. One 2-ounce piece of prosciutto
  5. 1 teaspoon salt
  6. 4 octopus tentacles (about 2 pounds total)

BLACK BEAN–PEAR SAUCE

  1. 1/4 cup vegetable oil
  2. 2 teaspoons Chinese fermented black beans, rinsed (see Note)
  3. 1 teaspoon minced garlic
  4. 1 teaspoon minced fresh ginger
  5. 1 small shallot, minced
  6. 1 tablespoon finely diced red bell pepper
  7. 1 tablespoon finely diced jalapeño
  8. 1/2 small Bartlett pear, peeled and cut into 1/4-inch dice
  9. 1 tablespoon fresh lemon juice
  10. 1 tablespoon minced chives

MISO VINAIGRETTE

  1. 1 tablespoon white or blond miso
  2. 2 tablespoons balsamic vinegar
  3. 2 tablespoons vegetable oil
  4. 1 teaspoon squid ink (optional)
  5. Salt and freshly ground pepper

TO FINISH

  1. 2 tablespoons extra-virgin olive oil
  2. 2 teaspoons hot paprika
  3. Salt
  4. 1 tablespoon vegetable oil
  5. 16 baby arugula leaves
  6. 1 small Bartlett pear, cut into very thin wedges

 

 

 

  1. In a large, deep skillet, combine 2 quarts of water with the onion, garlic, parsley, prosciutto and salt. Cover, bring to a boil and simmer over moderate heat for 5 minutes. Add the octopus to the broth, cover partially and simmer over low heat until tender, about 1 hour; drain and pat dry.
  2. In a small skillet, heat the vegetable oil. Add the black beans and cook over moderate heat for 2 minutes. Add the garlic, ginger and shallot and cook until softened, about 4 minutes. Add the red bell pepper and jalapeño and cook until starting to soften, about 2 minutes. Stir in the pear and remove from the heat. Stir in the lemon juice and chives.
  3. In a small bowl, whisk the miso with the balsamic vinegar, oil, squid ink and 2 tablespoons of water. Season with salt and pepper.
  4. In a bowl, mix the olive oil with the paprika and rub it all over the cooked octopus; season with salt. In a skillet, heat the vegetable oil until shimmering. Add the octopus and cook over high heat until browned all over, about 6 minutes. Transfer the octopus to a carving board and slice it crosswise 1/3 inch thick.
  5. Spread the vinaigrette on 4 plates and top with the octopus. Spoon the black bean–pear sauce over the octopus. Garnish with the arugula and pear wedges and serve.
